This recipe is super easy!

Ingredients:

  • 2 cups of King Arthurs 1-1 flour (If you don't have this any 1-1 flour will work. If you don't have that you can use 1 teaspoon of xanthan gum)
  • 1/2 a teaspoon fine salt
  • 1/2 a teaspoon baking soda
  • 6 tablespoons of cornstarch
  • 2 teaspoons baking powder
  • 1 1/3 cups buttermilk ( You can use 1 1/3 cup milk and 1 and a dash of lemon juice.)
  • 1 egg
  • 4 egg whites
  • 10 tablespoons of butter
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups of granulated sugar.

This recipe is super fluffy and moist and everyone will love it!

Directions:                                    Pictures are down below.

1. pre-heat oven to 350 degrees fahrenheit or 175 degrees celsius.

2. Lightly grease two 9 inch cake pans.

3. place parchment paper rounds on the bottom (If you don't have these click     Set aside.

4. In a medium size sift together flour and cornstarch, and maybe xanthan gum.

5. Add Baking soda, powder, and salt. Whisk.

6. In a larger bowl mix the egg whites, egg, buttermilk, and vanilla.

7. In the bowl of a stand mixer, or a large bowl and hand mixer, cream butter and sugar till light, and fluffy.

8. Add 1/4 of the dry ingredients, then 1/3 of the wet. Continue alternating until fully combined. 

9. Add food coloring of your choice. (Optional).

10. It may be a bit curdled. That's okay.

11. seperate evenly between the two cake pans. Bake in the oven for 20-30 minutes. Always start with 20. 

12. While waiting you can clean up, or make the buttercream. The recipe will be farther down. Don't feel obligated to use mine.
