This recipe is SSSOOOOO good! It's perfect for fall and winter. My Mom is gluten free and we are vegitarians. Most of my recipes will be gluten free. I will try to do other diet foods as well.

For this recipe you will need the following: sugar, vegitable oil, eggs, water, pumpkin puree, ground ginger, ground allspice, ground cinnamon, ground cloves, gluten free flour mix, xanthem gum, baking soda, salt, baking powder and walnuts.
The measurements are down below.
1 1/2 cups of sugar
1/2 of vegetable oil
2 eggs
1/3 cup water
1/2 can pumpkin puree - 7/8 cup
1 tsp ground ginger
1/2 tsp ground allspice
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1 3/4 cups gluten free flour mix
about 3/4 tbsp xanthan gum
1 tsp baking soda
3/4 tsp salt
1/4 tsp baking powder
optional 1/3 chopped walnuts
1 . preheat the oven to 350 degrees F. lightly grease a 9" x 5" inch loaf pan.
2. in a large bowl mix sugar, oil, and eggs. Beat until smooth. Add water and blend well. Add in pumpkin, ginger, allspice, cinnamon, and cloves.
3. In a medium sized bowl, combine flour, Xanthan gum, baking soda, salt, and baking powder. Add dry ingredients to the pumpkin mixture and stir just until all of the ingredients are mixed. Pour the batter into the loaf pan that we have pre-prepared.
4. Bake in preheated oven 'til a toothpick or fork comes out clean,around an hour.
