Oatmeal chocolate chip cookie

Okay. So this is another pretty hard recipe. It's super yummy, but in my case pretty messy. You'll need the following:

  • 1 1/4 cups of gluten free flour 
  • 1/2 tsp xanthan gum 
  • 1 tsp baking soda
  • 1 cup butter
  • 1/4 cup sugar
  • 1 cup light brown sugar, packed
  • a splash of vanilla
  • 2 eggs
  • 2 cups rolled oats
  • 1 cup of semi sweet chocolate chips or chunks

mix flour, xanthan gum, and baking soda with a whisk. Cream butter and sugars. Add a splash of vanilla. Beat until smooth and creamy. Beat in eggs, one at a time. Gradually add flour mix. Fold in oatmeal and chocolate. 

line a 14" or 12" pizza pan with tin foil. ( I didn't push it in tight enough and it spilled all over my oven) spray with non-stick cooking spray. Spread cookie batter in pan. Bake at 350 degrees F for about 15-20 minutes, (I ended up cooking it for 25 minutes) until golden brown but still a little soft in the center. Cool in pan.
